The complicated situation of the Covid-19 and the increase in the rental price of the premises where Acánthum is currently located, have led the chef from Huelva, Xanty Elías, to opt for the closure of the restaurant. “The reason for this tough decision has not only been the pandemic, but the impossibility of renewing the lease for the premises,” explains Xanty.

Given these circumstances, the chef assures that he prefers to put all his efforts into developing his new gastronomic projects for Huelva. Thus, this decision will give you the opportunity to focus on the imminent opening of Finca Alfoliz.

Located in Aljaraque, it will be a 10,000 m2 place surrounded by nature that will have a restaurant focused on grilling and sustainability. An open space, adapted to the reality of the moment and the conditions of the health crisis. “We want to offer freedom and space, as well as simple gastronomy, based on “good cooking” and in accordance with the current economic situation”, he says. "The idea for the project was born in 2016 and since then I have had a crazy desire to get it going."

In addition, the chef from Huelva reveals that he is very excited about a new gastronomic adventure in the capital, a project for the future construction of a new concept in the area of ​​the Port of Huelva: “It will be a sustainable and unique restaurant for the city ​​in a place of value such as the Levante Dock", he confesses.

Likewise, the Xanty Elías Group will continue to be immersed, in parallel, in the rest of its projects, such as the Prenauta Foundation (with the 'Children eat the future' program), as well as in its numerous gastronomic consultancies, collaborations with brands and, anticipates, “the writing of a very personal book”.

However, the man from Huelva, despite setting his sights on the present and the future of Huelva's gastronomy with exciting projects, cannot and does not want to forget what he has experienced during these years at the helm of Acánthum.

Xanty is deeply grateful for all those who have been part, in some way, of his restaurant and is proud of the great recognition that he has been reaping throughout this intense stage.

“We believe that the work and effort invested have left a great impression, not only in our project, but also in the city and in Huelva society. Acánthum started out unpretentious and, little by little, rose thanks to the work of a team that has given its best every day”, he confesses.

The chef assures that the spirit of Acánthum will continue to live in Huelva, “where there are still establishments that have also evolved thanks to the positive impact we had on the gastronomy of the area”.

Now, with the good taste of what he has experienced, Xanty Elías sets his sights on new horizons. He will continue giving Huelva new gastronomic experiences adapted to the new times. And he will do it with his essence. Under the seal of a chef from Huelva who loves his roots and the products of his land.
